The chef: Jason Halverson spent over two years as executive sous chef at Michael Mina before moving on to run the kitchen at new Russian Hill sensation Stones Throw, where he cooks up dishes such as potato puffs oozing with egg yolk, and squid ink pasta with spicy capers, clams, and calamari.
What he craves: “After a round of drinks at 15 Romolo, I like to go to My Canh on Broadway, a Vietnamese place right before the tunnel. We order the raw beef salad, which isn’t on the menu. You just ask for it, and it comes with nuoc cham, fried peanuts, fried onions, and spicy chili oil.
