Move over, Chipotle. One of the best fast-casual concepts to come down the pipeline is the brainchild of three Bay Areans: husband and wife Grace Nguyen (executive chef) and Chad Newton (culinary director) and CEO Frank Klein. The flavors of Vietnam come together in a choose-your-own-adventure extravaganza: How about rice noodles topped with coconut curry, pickled vegetables, fresh herbs, and a caramel egg? For extra chili fire, you can “hot box it.” The fact that it’s all gluten-free is on the house. The first location opened in Palo Alto, and last month saw the debut of one more in Mountain View, with another to come in Burlingame in March. We can’t wait to see an Asian Box in San Francisco.
