Orange Is the New Brioche

Carolyn Alburger | December 3, 2013 | Story Ingredient

Le Marais head baker Justin Brown is quietly turning out yeasty goodness to rival Tartine’s in his five-month-old Marina bakery. For this orange brioche, a holiday special, he uses fresh-squeezed juice and candied orange peel, bestowing a whisper of citrus on the buttery pull-apart mounds. Snatch one of the roughly 10 loaves baked daily for your holiday spread or a party gift. Then succumb to Brown’s extra treasures: Linzer baubles, peppermint chocolate macarons, or his pastiche of other flawless, more rustic breads. One thing that this bakery doesn’t share with Tartine? Ridiculous lines—at least, not yet. 2066 Chestnut St. (Near Steiner St.), 415-359-9801
