Sourcing the venison from Hudson Valley boutique Millbrook Venison Products, a strong partnership Chef Upper of Alexander's Steakhouse fame has maintained since his prior time in New York, the quality of meat is high in protein and low in fat and cholesterol.
"We have a strong focus on butchery here at AFICI and are also committed to using every part of every product that comes through our doors," Chef Upper proudly elucidates. "We are excited to demonstrate that fallow deer can be both tender and extremely versatile.” The whole venison will be transformed in a wide variety of ways, each course pairing with seasonal autumnal produce and fragrant herbs to craft a truly convivial holiday taste and experience.
